    Sometimes you just need a swift kick of reality from a good friend.
    And if they're a really good friend, they'll choose their words carefully and maybe even pad you down with a couple of compliments (aka "you're awesome so don't be so stupid").
  • letting go and taking hold

    This weekend, I discovered another engagement and another baby on its way.  My best friends chit-chatted with me about their husbands, their jobs, and their new houses.
    Without reservation, I am so happy for these people.
    And I am thrilled for myself because I love exactly where I am in my life right now.  Maybe that happiness won't last for long (because don't we love to complain?), but I am just glad because I remember what it was like, and therefore, I have HOPE. (Lamentations 3:19-24)

    It is the greatest feeling to stare down old, nearly forgotten insecurities and know you are much stronger than they are.

  • Cranutkin Bread

    Here it is!  My first written recipe.  It's called "Cranutkin" because it has cranberries, nuts (pecans), and pumpkin in it.



    Ingredients

    3 cups sugar
    1 cup vegetable oil
    4 eggs, lightly beaten
    16 ounces canned pumpkin
    3 ½ cups flour
    1/3 cup chopped pecans
    ½ cup dried cranberries (chopped or unchopped, you pick)
    2 teaspoons salt
    2 teaspoons baking soda
    2 teaspoons orange zest
    1 teaspoon baking powder
    1 teaspoon allspice
    1 teaspoon cinnamon
    1 teaspoon nutmeg (optional, because I never have any)
    2/3 cup water (half is 1/3)
    1. Butter and lightly flour 2 9x5 loaf pans or a large 13x9 baking pan.
    2.  In a large bowl, stir together sugar, oil, eggs, and pumpkin. (wet ingredients)
    3. Combine the dry ingredients, including the cranberries and pecans, in another bowl.
    4. Mix the dry ingredients into the bowl of wet ingredients, adding the water in increments as you go.
    5. Pour the batter into the pan(s).
    6. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
    7. Let stand for 10 minutes to cool. 

    Optional: Orange Cream Cheese Glaze

    Ingredients
    1 cup softened cream cheese
    ¼ cup fresh orange juice
    ¼ cup honey
    ½ vanilla extract

    Directions
    Beat glaze ingredients at medium speed with an electric mixer until it is creamy.

    I finally convinced someone to be a speech-language pathologist!
    Ho ho! The art of my rhetoric is mind-boggling!

    Hah.  Just kidding.  But seriously, though.  I am really excited for my friend Michelle.

    Speaking of speech, I'm getting the biggest headache trying to find a practicum placement for my final semester.  I need to advise Michelle to never send in your request late, even if you claim to not care where you are placed.  Because then you will find out that you do care.  And you do not want to drive all the way to Mesquite.
    I like to pass lessons on.

    I had Thai with my roommate, and we discussed all things we wanted to do, the shows we wanted to see.  Ever since I visited the new Dallas Performing Arts Center, I've wanted to see a show.  Hopefully, I'll get enough people to watch South Pacific with me in December for my birthday!  Saerom actually knows someone who helps manage the Winspear, and we're thinking it might be an excellent idea to volunteer as a docent/usher/etc at one of the shows.  How exciting.  There are so many things I would love to do (but why do they all usually cost lots of money?!).  I love adventures.



    Speaking of adventures, I cannot wait for the weekend.
